Got back home and marinated the chicken thighs in a combo of Greek yogurt, microplaned garlic, lemon juice and zest, and smoked paprika and salt and pepper. Delicate combo already. I should've known. Well, dinnertime finally came around and I was so excited to pan fry it I forgot that the skin and the marinade were seriously confounding factors. In a ripping hot stainless steel pan (all I care to cook on at this time), I dropped in my very wet and very cold chicken thigh in, skin side down. D'OH!!! So so many mistakes in less than 5 minutes. The marinade turned to charcoal, the skin burned, and the inside wasn't even that hot -- only got up to 165, well below the temp needed to make the thigh meat tender. Made some veggie bean soup since I was really getting hungry but I mostly craved protein.
