P.S. Turns out I've been brewing my hojicha wrong. The tea itself is on the stale side, but as a green tea, it still needs cooler temperatures. I brewed a teaspoon and a half with 195 F water and it turned out as smooth as cold brew. No sourness, no bitterness, no chemical-y or wood-y taste. Not too much oil on the top of the liquid as well. And I brewed this just water and leaves right in the mug. Looking forward to chugging this down tomorrow.
